Broccoli Omelette |
Let's keep it real, the extra energy is needed during this busy time of the year. After all, the weather is cold, our calendars are full, not to mention the fighting of the crowds when Christmas shopping.
So yeah, we need a little bump in the morning and this yummy Broccoli Omelette is the perfect vehicle to give you just that.
Preparation time: 30 minutes
Yield: Three 10 cm Omelettes
Level: Easy Peasy
Ingredients:
- 3 Eggs
- 6 Broccoli Florets (chopped)
- 2 tbs Chopped Bacon
- 2 tbsp Water
- 1 Small garlic clove
- 3 tbsp Shredded Gouda
- Olive oil
- Salt and Pepper to taste
- Oregano (optional)
In a small bowl, break one egg, beat it and set it aside. Heat up a 10 cm (5 in) skillet to medium, drizzle with a bit of olive oil, pour in the beat egg, sprinkle some oregano and season with salt and pepper. You can cook your Omelette the way you like best, leave it slightly underdone so it's still creamy or fry it both sides so the egg is cooked through. Repeat this process with the two other eggs.
To assemble, lay one Omelette on a plate, top it with the Bacon & Broccoli saute and shredded cheese. You can devour it by it self, make yourself a breakfast sandwich or eat it on the side with toast and jam... YUM!
Although it may sound weird, my son loves broccoli and this omelet would be perfect for all of us!
