Peach Bacon Canapés

With few ingredients, this Canapé will create a flavor explosion in your mouth!This is my tribute to the peach season and the International Bacon day.

Very simply to prepare, this appetizer is the perfect solution for dinner parties and pot lucks. If you have a little bit of extra time, you can even bake the baguette yourself using this Baguette Recipe and be complemented by your Guests on your baking skills ;) . You're also welcome to substitute the cream cheese for goat cheese. Actually, goat cheese was my first choice, but Mr. Love, Thyme and Honey really doesn't like it. :(

Preparation time: 40 minutes
Yield: 16 Canapés. 
Level: Easy

  • 100g Cream cheese
  • 2 Peaches
  • 16 Baguette slices
  • 6 Bacon strips
  • Honey
  • Rosemary
Toast the Baguette slices and at the same time, but in different baking sheets, the bacon in a pre-heated 350 F (175 C) oven. It should take between 15 to 20 minutes for the baguette slices to toast and around 30 minutes for the bacon to crisp up.

Halve and pit the peaches then cut them in 0.5mm thick slices. Heat a grilling pan over to high and carefully grill the peaches (you could also do this using a BBQ if you wish). When the peaches slices develop nice dark stripes, turn them.

To assemble the canapés, spread 1 tsp of cream cheese on the baguette toast, lay the bacon in diagonal and a slice of peach overlapping it. Then add a little twig of rosemary on the still visible cream cheese. To finish, drizzle one 1tsp oh honey on top.
