Potato Bread

This is one of my favorite breads, very simple but incredibly flavorful.

Baking for me is synonym of relaxation. Something in the process of measuring, mixing, kneading and waiting just calms me. Although I wasn't particularly stressed today, I decided I needed some baking therapy and choose this tasty Potato Bread to bake. 
You may find the dough a bit messy to work with (I do) but I guarantee the result is worth it. You can form it into any shape you like, buns, rolls, loaves, you pick! A fun idea is to make little bite size buns for mini sandwiches.

Preparation time: 3 hrs
Yield: 10 Buns
Level: Medium

Ingredients
  • 600g Bread flour
  • 220ml Milk (warm)
  • 100g Butter 
  • 100g Sugar
  • 200g Potato (fully cooked and pureed)
  • 2 tsp of Salt
  • 2 eggs
  • 1 tbsp + 1 tsp Dry yeast (20g)
  • Additional flour for dusting
With the exception of the milk, all ingredients should be at room temperature. 

Start by dissolving the yeast and sugar in the milk. To this mixture, add eggs and butter. 

In a separate bowl add the flour, pureed potatoes, salt and proceed to slowly incorporate the milk mixture. Start by mixing with a fork until all ingredients clump together then move to work with your hands. You'll likely need to continuously dust your working area with flour because this is a very sticky dough. You won't need to knead it for a long time though, around 5 minutes is enough. 

Place the dough in a slightly greased bowl, cover and let it ferment for 1 hr or until it doubles in size. 

When that happens, it's time to start shaping your bread. To form sub rolls split the dough in ten portions and with your two hands start rolling each portion from the inside out. To form buns, take one portion and with your hand flat open, press it slightly against the dough and make circular movements, until it forms an uniform ball. You might also need additional flour for dusting during this step.

Place the formed buns on a baking sheet lined with parchment paper and let them rest for another hour. Bake in a pre-heated 350 F (175 C) oven for approximately 15 minutes (until golden brown).

Remove the buns from the oven and be patient! You need to let them cool down for at least 20 minutes before you can bite into them, otherwise you'll get tummy troubles. :)
