Cabbage Bacon Pasta

What can you make with cabbage and bacon? Pasta of course! 

I'm not entirely sure of how this dish happened. I opened the fridge, saw the cabbage, the bacon and some leftover vegetable stock. Then I opened the pantry and saw the package of Fusilli. 

It was just like that. The Cabbage Bacon Pasta was born. 
Cabbage & pasta combo is no new thing, there are tons of Asian dishes that involve the marriage of these two ingredients. However, this particular dish has a completely different flavor profile, one Mr. LTH and I quite liked. 
Give this dish a try and you'll be amazed of how, with so few ingredients, you can create a incredibly tasty meal. Not to mention that it's super easy and FAST to prepare, making it perfect for those busy week nights.

Cabbage Bacon Pasta
Preparation time: 30 minutes
Yield: 2 portions
Level: Easy peasy 

Ingredients
  • 150g Green cabbage
  • 6 Thin slices of bacon (sliced)
  • 2 Stalks of spring onion (sliced)
  • 1 clove of garlic(chopped)
  • 1/2 Cup of water
  • 1 1/2 Cups of vegetable stock
  • 250g Fusilli (dry pasta)
  • Salt and pepper to taste
Bring a large pot of water to a boil and heat a large skillet to medium high. 

Add the bacon slices together with the 1/2 cup of water to the skillet. The water will help the bacon release it's fat without burning, then it will evaporate and the bacon will start to crisp up. When that happens, add the spring onion slices and garlic and cook for another couple of minutes. Then add the vegetable stock and let all ingredients simmer together until stock is reduced by half. Season with salt and pepper.

Cook the dry past in the pot of boiling water until it has softened but is not yet "al dente" (don't forget to add a generous amount of salt to the water).

Add the pasta to the cabbage sauce along with a little bit of pasta water (maybe 1/2 a ladle) and let all ingredients cook together until pasta has reached the desired tenderness. 

Then it's ready to be devoured! With lots of Parmesan Cheese! ;)

  1. I used to make a similar dish with stock, cabbage, and sausage. And now that you remind me, I think I need to make it again. My guy would love the bacon addition!
