Honey Yogurt Banana Cake

This recipe is a variation of the famous and traditional Banana Bread. I've renamed it to "cake" because it does result into a more cake like texture and flavor. 
The honey and yogurt make this cake deliciously moist and if you wish, you can add walnuts for a bit of crunch. This cake is perfect for the afternoon tea or breakfast and you can certainly doll it up with some whipped cream if you fancy. ;)

Preparation time: 1 hr
Yield: 10 slices

Ingredients
  • 1 Large banana (125g)
  • 125g Yogurt (1.5% Fat)
  • 250g Cake flour
  • 2 Large eggs
  • 80g Sugar
  • 80g Honey
  • 80 Oil (or melted butter)
  • 2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1/4 tsp Cinnamon powder
Combine all wet ingredients together (banana, yogurt, eggs, honey and oil) and sift all dry ingredients together (flour, sugar, baking powder, baking soda, salt and cinnamon powder).

Carefully fold the wet and dry ingredients together - you don't want to over beat the batter. 

Pour the batter into a buttered loaf pan and bake on a pre-heated oven at 375 F (190 C) for 30 minutes.
