While browsing the net , I found a few articles suggesting that butter could be substituted by avocado - due to its fat content - in most baking recipes, on a scale of 1 to 1. Intrigued, I decided to try the theory and baked my delicious Milk Buns recipe using avocados.
The result was astoundingly delicious! And in case you worry about the avocado flavor and color, you can't really notice them. ;)

This recipe should take you a good three hours total to prepare and it yields 6 buns of 150g each.

Ingredients
  • 500g bread flour
  • 250ml milk (scalded and cooled to lukewarm)
  • 5g dry east
  • 75g avocado (pureed) 
  • 2 tbsp salt
  • 50g sugar
  • 1 egg
Combine the lukewarm milk with sugar, egg, avocado and east together. Add the flour and salt and knead the dough for about 20 minutes (you need an intensive gluten development, which only happens the more the dough is worked). 

Place the dough on a slightly greased bowl, cover with plastic wrap and let it ferment for 1:30 hrs, until it doubles in size. 

Once the dough has risen, divide it in 6 parts of roughly 150g each. Form the buns according to your preference. Let the buns ferment for another hour, then egg brush them and bake at 400 F (200 C) for about 15 min.


If you want to form the buns like I did, all you have to do is to roll the dough so it resembles a snake and then - literally - make a simple not, so one of the ends of the snake is going to be sticking out of the circle.

  7. What a yummy idea! I like to put carrot puree in some of my rolls that you can't really taste. Of course, it's not in the place of oil. I will have to try using avocado like this.
